One of my favorite spots in PV - Edit
They can accommodate vegan. It’s not listed on the menu. They also are able to add textured soy to burritos if you bring it with you.

The burrito was delicious! I believe it has sautéed carrots mushroom zucchini onions & bell pepper with rice and beans served with a salsa.
